Montsia extra paella rice is of the highest quality and its monovariety grain and size ensures even cooking. It has D.O. Arros Del Delta De l'Ebre.
This rice is the perfect paella rice as its small round grains absorb the water and flavour well whilst remaining firm and separate.
Spain produces over 855,000 metric tonnes of rice a year; most of this is grown in the Tarragona region and is not exported.

Origin. Ebro Delta
Montsià rice is sown, grown and harvested only in the fertile lands of the Ebro Delta with the efforts and expertise of the farmer belonging to the Montsià Chamber of Rice Growers.
This is the most traditional product from Delta, grown on small, medium and large surfaces , which have been one of the main uses of their land.
The delta countryside, in the Montsià and Baix Ebre districts, in the province of Tarragona, is unique of its kind. On the one hand, the shored is washed by the waters of the Mediterranean Sea, while on the other, the influence of the river Ebro and the passage of time have helped to form the Delta as an excellent place for growing rice, as it is framed by the Montsià and Godall Sierras and overall enjoys the protection of the mountains of the Macís del Port.
This geographic diversity is also reflected in social, cultural and gastronomic, give wealth for their people, customs and Montsià rice.
The Montsià rice is produced throughout a modern processing procedure involving a high degree of quality control.
Its journey from the silos to the mill takes it through the different processing units equipped with the most advanced technology complying with the most stringent health a quality requirements laid down by the current laws and regulation governing such matters, all of which has led to its being considered worthy of the Designation of Quality and the Arròs del Delta de l’Ebre protected Designation of Origin.

Paella del Delta
Clean, chop and salt the chicken, the monkfish and the crayfish. Finely chop the onion and the tomatoes, dice the peppers and chop the green beans. When the paella dish is on the heat, pour in the oil and, when it is good and hot, add the chicken, the crayfish, the squid and the prawns. When it is all browned, remove it from the paella dish and add the tomato, onion and pepper. Stir frequently and add a ladleful of broth, waiting for it to reduce.
When the sauce is prepared, add the chicken, the squid, the crayfish, the prawns, the muscles, the monkfish, the beans and the peas. Mix everything together and wait 3 minutes before adding the rice.
Then add the boiling broth, leaving it on a strong heat and adding the saffron and the chopped garlic. Taste for saltiness.
Leave to boil for around 14 minutes until the rice is cooked and all the broth absorbed. Leave to stand for a while before serving.

400 g Montsià extra rice
150 g monkfish
8 squid rings
3 cloves garlic
1 red pepper
40 g peas
40 g green beans
Mixed meat and fish broth (twice as much as rice)
Oil, salt and saffron
