The saying  ‘where there is wine, there is vinegar’ is very true of Spain.

Spanish vinegars are considered some of the best vinegars in the world and include rare aged balsamic vinegars. 

The grapes used to make Spanish balsamic are different from those of the ‘tradizionale’ Italian version and although the method of ageing is identical to the Italian, the key difference is in the use of oak wood casks.
