Jamónes and Paletas
Cured meats or 'embutidos' form an integral part of the Spanish diet with the key products being jamón chorizo and salchichon. Jamón is probably the most popular, with many families having a leg of Jamón at home while bars and restaurants have them hanging from the ceiling. Spain has mastered the art of curing hams over many centuries and is now the leading producer of air-dried cured hams.
The two main types of Jamones in Spain are Jamon Iberico (Iberian Ham) and Jamon Serrano (Mountain Ham). Jamon Iberico is often referred to as 'Pata Negra' (black hoof) and is made from the dark skinned, black foot Iberian pig which is a breed descended from the Iberian wild boar. A minimum of 36 months ageing produces a rich, nutty complex flavour that is simply divine!
The famous Jamon Serrano can be produced from a number of different breeds of white pig and the rearing of Serrano pigs is closely regulated by the EU. Jamon Serrano has a lighter flavour with a smooth, firm texture and is an excellent alternative to the more expensive Iberico Jamons.
As well as the popular Jamon (back leg) we also import Paletas (front leg/shoulder). Paletas are smaller (around 4 to 6 kilos) which makes them ideal for home consumption. They often have a more intense flavour which makes them great for tapas. They are cured in the same way as Jamons albeit for less time due to their smaller size.
Our range includes Iberico Bellota (acorn fed) and Iberico Recebo (acorn and cereal fed) as well as the lighter flavoured Serrano. All have been directly imported from the producer to ensure that you get the best quality product. Our Jamons & Paletas are supplied by a small family-run company in Salamanca. The company demands the highest standards and produces some of the best cured meats that we have tasted.
