Lentejas de Pardina

Avila is a Spanish province situated between Madrid and Portugal, where the famous “Sierra de Gredos" mountains dominate the landscape.

The Avila region is famous for producing the best pulses in Spain.  They are cultivated in optimum climate and conditions: the high altitude, the purity of the water, the wealth of minerals in the soil aded to cold winters and dry summers. Harvesting is done by hand, pod by pod, to ensure ripeness.
