Torrijas
Ingredients
A stale loaf of good quality bread
4 eggs - beaten
250ml milk
A small cup of sugar
1 cinammon stick
Lemon rind
Olive oil to fry the bread
Cut the bread into 1-2 cm thick slices. Heat milk with sugar and add the cinnamon and lemon rind. Slowly bring to the boil and then remove the cinnamon and lemon. Soak the sliced bread in the milk mixture. Then put each piece of soaked bread in the beaten egg. Heat the oil and put the bread into the pan turning over twice until the bread is golden in colour. Drain on a paper towel and then immediately place onto a serving dish and dust with sugar and powdered cinnamon.
